Dough:
1 cup flour
1/4 tsp salt
1/4 lb butter ( 1 stick)
3 Tbsp sour cream
Filling:
2 cups grated cheese - Cheddar will give the strongest flavor and mozzarella the mildest, with muenster falling somewhere in between. These are just a couple of options; try combining your favourites to create your own unique flavour.
2 cups cooked vegetables, approx (see note)
6 egg yolks
1 tsp salt
Pinch of pepper
1 cup heavy cream
1 cup milk
1 Tbsp flour
Fresh herbs (parsley, chives etc)
For Dough:
Sift together flour and salt, work in butter with fingers. Stir in sour cream until a dough forms, chill about 3 hours. Roll onto a lightly floured surface and put into a 10 inch pie pan. Fill the crust with pie weights (or beans) and bake at 375 for about 10 minutes.
Quiche:
Place cheese on bottom of crust, layer with desired vegetables. Beat the yolks. Add salt and pepper. Add heavy cream, milk and flour. Pour over vegetables. Sprinkle with some grated cheese and the fresh herbs. Bake at 375 for 40 minutes until mostly set but still slightly jiggly'.
Note: any vegetables will accent a good custard filling for the quiche. The vegetables are best when lightly sautéed. The most popular include caramelized onions, spinach or mushrooms, just to name a few. Try a different vegetable, or try combining a few, to give your quiche that personal touch.
