1 lb ground turkey
2 tablespoons ketchup
1 egg lightly beaten
1/2 cup cracker crumbs
1 teaspoon oregano
1 teaspoon basil
1 1/2 teaspoon parsley
1 teaspoon garlic powder
1/2 teaspoon salt
1 pound spaghetti, cooked according to package directions
1/3 cup olive oil
2 teaspoons minced garlic
2 medium zucchini, grated
1 red bell pepper, seeded and diced
1 carrot, peeled, grated
2 cups prepared marinara sauce
1 teaspoon dried basil
Preheat oven to 350. In a bowl, combine the turkey, ketchup, egg, cracker crumbs, oregano, basil, parsley, garlic powder and salt. Mix to combine and shape into walnut sized balls. Line a baking sheet with sides with foil and then spray the foil with cooking spray. Place the meatballs on the prepared baking sheet and bake for 20-25 minutes, or until fully cooked through. Transfer the meatballs to a plate.
Place the cooked pasta in a serving bowl. In a skillet heat the oil and saute the garlic for 1 minute. Add the zucchini, bell pepper and carrot. Cook for about 2 minutes. Add marinara sauce and basil. Cook and stir continuously until heated throughout. You can add the pasta and meatballs to the sauce at this point or serve the sauce and meatballs over the pasta, your choice. You can also serve it individually or serve it family style.
