4 cloves elephant garlic
2 tbsp olive oil
1/2 tsp salt(or to taste)
1 tsp lemon juice
1/2 cup mayonnaise
1/2 tsp sugar
Preheat oven to 375 degrees
Cut the tops of the garlic and place in a baking dish. Pour olive oil over. Let roast open in oven for about 45 minutes until soft. Remove from oven and cool.
Use gloves and squeeze flesh out of the papery skins into a bowl.
Add mayonnaise, lemon juice, salt and sugar and mix well (you can use an immersion blender to create a smooth consistency).
