Chewy Chocolate Chip Granola Bars

Difficulty Level: Easy
Preparation Time: 5 minutes
Cooking Time: 35 minutes
Servings: 15 bars
In the past, I’ve tried multiple recipes for granola or power bars, but have not been able to please my children’s discerning palates. Finally! I put together something new and it actually earned me 3 thumbs up!! I’m the one having the last laugh because these are the healthiest ones I’ve tried so far. I love that they are nice and chewy and so versatile – you can change the white flour for whole wheat, and switch the chocolate chips for craisins or dried blueberries. A great way to add some omega 3 is to switch 1/4 cup of wheat germ for flax seed.
Have fun playing with different variations. I hope you enjoy them!
2 cups oats
1/2 cup brown sugar
1/2 cup wheat germ
3/4 tsp. cinnamon
1 cup flour
1/2 tsp salt
1/2 cup honey
1/2 cup oil
1/2 cup applesauce
2 tsp. vanilla
1/2 cup chocolate chips (I used mini)
1. Preheat oven to 350.
2. In a large bowl, mix oats, sugar, wheat germ, cinnamon, flour and salt.
3. Make a well and add honey, egg, oil applesauce and vanilla inside.
4. Mix well and add chocolate chips.
5. Pat down into a lined 9x13 pan
6. Bake at 350 for 35 minutes
7. Let cool for 5 minutes and slice into bars 1 3/4” x 3”. Be sure to cut while still warm.
