I’m getting the impression that my readership actually enjoys simple but tasty cookies. Are you all really as busy as I am???

This cookie is a staple in my cookie jar. The beauty of it is that my family hasn’t caught on to the fact that they are eating the same cookie week after week because I keep changing it up.

These are basic chocolate chip sticks, but with the plethora of flavoured chips out there now, you can have a different flavor each week. I personally love the peanut butter and chocolate combo and my kids love the candy coated chocolate chips featured in this picture.

Feel free to add nuts, or craisins and dress them up by dipping or drizzling with chocolate.

For you health nuts out there – this one is made with oil!!!

Ingredients

1 cup oil


1 cup sugar


 1 cup brown sugar


2 eggs


2 tsp. Vanilla extract


3 cups flour


1 tsp baking soda


½ tsp salt


1 cup chips of your choice

Directions

1.  Preheat oven to 350.


 


2.  Line baking sheet with baking paper.


 


3.  In a stand mixer, combine oil and sugars and mix well.  Add eggs and vanilla.  Combine all dry ingredients and add to mixer.  Stir in chocolate chips.


 


4.  Pat batter out evenly over cookie sheet. (I find it easiest to do this with an extra sheet of baking paper on top)


 


5.  Bake for 25 minutes.  Let cool 10 minutes then slice into bars. (I like to trim the ends – especially because trimmings have no calories)
