I am always rushing during the day and am lucky if I can put a healthy lunch together (cheese puffs are not considered a healthy lunch). The herbs are fresh frozen so they are packed with nutrients, and by adding a small amount of healthy olive oil and omega-3 packed walnuts you make your lunch even healthier but don’t skimp on taste. You can even make this recipe gluten-free for the GFE (gluten-free eater) by using your favorite gluten-free pasta. Fast & healthy…it’s going to be a great day!
1 cup cooked rotini pasta
3 cubes Eden basil
2 cubes Eden parsley
1 cube Eden garlic
1 teaspoon olive oil
1/8 teaspoon crushed red pepper (optional)
½ teaspoon dried mint
½ tablespoon ground walnuts (optional)

In a small bowl combine the basil, parsley, garlic, olive oil, crushed red pepper, and dried mint. Set the pesto aside.
