Healthy Blueberry Pie

There’s nothing like a pie made from fresh summer fruits. While frozen may be good as a stand-in, try to use fresh when you can.

Ingredients

Pie Crust:


2 cups flour


1⁄2 cup oil


1⁄4 cup orange juice


1 egg


1⁄2 cup sugar  


1⁄4 tsp salt


Blueberry Filling:


5 cups blueberries  


1⁄2 cup sugar  


1⁄4 cup cornstarch  


1⁄4 cup water


Topping


1 1⁄2 cups granola of your choice, preferably with pecans

Directions

Preheat oven to 375°F (190°C).


 


Place all the ingredients for the dough in a food processor fitted with the S blade and pulse just until dough comes together. Remove and knead with your hands a few times. Cover in a plastic wrap until you are ready to use. roll the dough very carefully between 2 pieces of parchment paper. Press into a 10-inch pie dish, gently apply- ing pressure along the sides of the dish and closing all the gaps. (If you have too much dough, discard the rest or save it for another recipe.)
