My family loves latkes and sufganiyot so come Chanukah there’s no compelling reason for me to stray from tradition. But stray I invariably do since I love to try new recipes and new ways to incorporate vegetable and olive oil as a way to herald the holidays. This year has proven to be no different. I will of course be making my favourite latkes (a blend of Yukon Gold and sweet potatoes) and my husband, even as he eats one latke after another, will complain of the way the oil smell lingers in the house for days.  I will also, however, be making Fried Couscous Cakes, a tantalizing way of preparing couscous and frying them in the oil that is so ubiquitous at this time of year. Since I love to incorporate more fruits and vegetables into our diet whenever I can ( to be more heart and brain healthy ) I will also be serving Chicken Breasts Stuffed with Caramelized Onions and Apples. The sweetness of the onions pairs beautifully with the tart sweetness of the apples (you can choose any apple that holds its shape when cooking such as Granny Smith, Golden Delicious, Spy or Matsu) while both complement the meatiness of the boneless skinless chicken breasts.
